The Scottsdale branch of Chicago steakhouse Maple & Ash sits on East Camelback Road and cooks over a wood-fired hearth. Its Tower Hour, every day from 4pm to 6pm in the bar and lounge, puts oysters at $3 apiece, a fire-roasted tower of clams, oysters, prawns and scallops at $40, and house red, rosé or bubbles at $10. Martinis and old fashioneds are $15.
